Content: Normal 0 false false false EN-US X-NONE X-NONE MicrosoftInternetExplorer4 /* Style Definitions */ table.MsoNormalTable {mso-style-name:"Table Normal"; mso-tstyle-rowband-size:0; mso-tstyle-colband-size:0; mso-style-noshow:yes; mso-style-priority:99; mso-style-qformat:yes; mso-style-parent:""; mso-padding-alt:0in 5.4pt 0in 5.4pt; mso-para-margin-top:0in; mso-para-margin-right:0in; mso-para-margin-bottom:10.0pt; mso-para-margin-left:0in; line-height:115%; mso-pagination:widow-orphan; font-size:11.0pt; font-family:"Calibri","sans-serif"; mso-ascii-font-family:Calibri; mso-ascii-theme-font:minor-latin; mso-hansi-font-family:Calibri; mso-hansi-theme-font:minor-latin;} Mexican Lasagna   Ingredients 1lb extra lean ground beef or turkey breast ½ large onion 1-2 cloves garlic, minced 1 ½ cups low-fat/fat free cottage cheese 1 cup fat free sour cream 1 jar (4 ounces) chopped green chile peppers ½ cup chopped cilantro (optional) 2 tsp ground cumin 2 ½ cups salsa 4-6 whole wheat/high fiber tortillas halved (Mission brand, carb smart is what I use) ½-1 cup reduced fat Monterey jack cheese (optional) Directions 1.          Preheat oven to 350 degrees 2.        Coat a 13”x9” baking dish with olive oil spray 3.        Coat large nonstick skillet with olive oil spray, and heat up on medium heat.   Add the ground beef/turkey and cook, turning several times, for approximately 5 minutes or until no longer pink. 4.        Remove ground beef/turkey and place in a medium bowl…pat grease off with paper towel and place to the side. 5.        Wipe the skillet with a paper towel to remove the meat grease and cover again with a coat of olive oil spray.   Place over medium heat again and add the onion and garlic.   Cover and cook, stirring occasionally for 7-8 minutes, or until lightly browned. 6.        Add to the ground beef/turkey in the bowl. 7.        In another medium bowl, combine the cottage cheese, sour cream, peppers, cilantro, and cumin. 8.        Spread approximately 1 cup of the salsa across the bottom of the baking dish.   Arrange half of the tortillas evenly over the salsa.   Spread half of the cheese over the tortilla layer followed by half of the ground beef/turkey mixture.   Carefully spread a layer using all of the cottage cheese/sour cream mixture over the top of the beef.   Repeat the layers starting with approximately 1 cup salsa, followed by a layer using the rest of the tortillas, topped with cheese (optional), and the last layer will contain the remaining meat.   Sprinkle the top with the a little salsa and cheese. 9.        Bake for 30 minutes, or until heated through.   Loosely cover with foil if cheese begins to brown too quickly.
